Ingredients

  • 2 pound cooked chicken/turkey
  • 2 pound cooked pulled pork
  • 4 cups chicken broth
  • 8 tablespoons butter
  • 2 cup frozen lima beans
  • 3 cup frozen corn
  • 2 medium diced onion
  • 6 teaspoons minced garlic
  • 2 tablespoon tomato paste
  • 2 teaspoon minced thyme
  • 2 cup BBQ sauce
  • Salt and pepper
  • 2 can of diced tomatoe
  • 2 teaspoon creole seasoning
  • 1 teaspoon cayenne pepper As your preference
  • 2 tablespoon Worcestershire sauce

Instructions

  • In a large pot or Dutch oven, melt the butter over medium heat.
  • Add in the diced onions and minced garlic and cook until softened, about 5 minutes.
  • Stir in the tomato paste and thyme, cooking for an additional 2 minutes.
  • Add in the cooked chicken/turkey and pulled pork, stirring to combine with the onion mixture.
  • Pour in the chicken broth, BBQ sauce, diced tomatoes, creole seasoning, cayenne pepper (if using), and Worcestershire sauce. Stir to combine everything together.
  • Bring the stew to a boil, then reduce the heat to low and let it simmer for 30 minutes.
  • After 30 minutes, add in the frozen lima beans and corn. Continue to simmer for an additional 10-15 minutes, or until the vegetables are tender.
  • Taste the stew and adjust seasoning as needed with salt and pepper.
  • Serve hot with crusty bread or biscuits.

Notes

– To make this stew even heartier, consider adding other vegetables such as carrots, celery, or bell peppers.
– To thicken the stew, consider adding a slurry (a mixture of cornstarch and water) to the pot.
