Olive Tapenade Hummus is a delicious and healthy dip that is perfect for entertaining or just as a snack. It is easy to make and is packed with flavour thanks to the combination of olives, garlic, and spices.
In a medium-sized pan, heat olive oil over medium-high heat.
Add the onion and sauté until softened, about 5 minutes.
Add in the garlic and cook for an additional minute.
Add in the chickpeas, chicken bouillon powder, baking soda and salt. Stir well to combine.
Cook for 8-10 minutes, stirring occasionally until the chickpeas are slightly golden.
Remove from heat and let cool for a few minutes.
In a blender or food processor, add the chickpea mixture, olives, lemon juice, and tahini. Blend until smooth and creamy.
If needed, adjust seasoning to taste with salt and additional lemon juice.
Serve in a bowl and garnish with extra olives if desired. Enjoy with your favorite vegetables, crackers, or flatbreads.
