Equipment

Ingredients

  • 4 cups chickpeas
  • 20 pieces kalamata olives
  • 4 tbsp Chicken Bouillon Powder
  • 10 cloves garlic
  • 2 small onion
  • salt as per taste
  • 6 tbsp lemon juice
  • 4 tbsp baking soda
  • 6 tbsp olive oil
  • 4 tbsp tahini

Instructions

  • In a medium-sized pan, heat olive oil over medium-high heat.
  • Add the onion and sauté until softened, about 5 minutes.
  • Add in the garlic and cook for an additional minute.
  • Add in the chickpeas, chicken bouillon powder, baking soda and salt. Stir well to combine.
  • Cook for 8-10 minutes, stirring occasionally until the chickpeas are slightly golden.
  • Remove from heat and let cool for a few minutes.
  • In a blender or food processor, add the chickpea mixture, olives, lemon juice, and tahini. Blend until smooth and creamy.
  • If needed, adjust seasoning to taste with salt and additional lemon juice.
  • Serve in a bowl and garnish with extra olives if desired. Enjoy with your favorite vegetables, crackers, or flatbreads.

Notes

– Use good-quality olive tapenade for the best flavor.
– If the hummus is too thick, add a little more olive oil or water to thin it out.
– Taste the hummus before serving and adjust the seasoning as needed.
– The hummus will keep in the refrigerator for up to 5 days.
– For a smooth texture, make sure to blend the hummus until it is completely smooth.
– You can also use canned chickpeas, but make sure to rinse them well before adding them to the food processor.
