Ingredients

  • 2 cooked chicken breast boneless, skinless
  • 4 tablespoons Walden Farms Amazin’ Mayo or another low-calorie mayo substitute
  • 2 tablespoon red onion diced
  • 2 tablespoon yellow mustard
  • 2 tablespoon red bell pepper diced
  • 2 tablespoon dill pickle diced
  • 2 tablespoon celery diced
  • Salt and pepper to taste

Instructions

  • First, cook your chicken breast according to your preferred method, whether it be grilling or roasting. Let it cool and then shred it into bite-size pieces.
  • In a large bowl, mix together the shredded chicken, Walden Farms Amazin’ Mayo (or other mayo substitute), red onion, yellow mustard, red bell pepper, dill pickle, and celery.
  • Add salt and pepper to taste and mix everything together until well combined.
  • Serve immediately or refrigerate for at least 30 minutes to let the flavors marinate before serving.
