Who can resist the delicious aroma of freshly baked cookies wafting through the house? In this blog post, I am excited to share with you one of my all-time favorite cookie recipes – the original Vanishing Oatmeal Cookie.

Ingredients

  • 1 tsp vanilla
  • 3/4 Cup packed brown sugar
  • 1/2 tsp salt optional
  • 2 Eggs
  • 1 Cup raisins
  • 1/2 Cup granulated sugar
  • 1 tsp Baking Soda
  • 1/2 Cup plus 6 tbsp softened butter
  • 1 1/2 Cups all-purpose flour
  • 3 Cups Quaker Oats quick or old fashioned, uncooked
  • 1 tsp ground cinnamon

Instructions

Step 1:

  • Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Step 2:

  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla.

Step 3:

  • In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the creamed butter and sugar mixture, mixing well after each addition.

Step 4:

  • Stir in the oats and raisins until evenly distributed throughout the cookie dough.

Step 5:

  • Drop dough by rounded tablespoons onto ungreased cookie sheets, leaving enough space between each cookie for them to spread while baking.

Step 6:

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

 – Softened Butter: Make sure your butter is softened to room temperature before starting the recipe. This will ensure that it mixes easily with the other ingredients and helps create a tender cookie crumb.
 – Quaker Oats: Whether you choose quick oats or old-fashioned oats, the key is to use uncooked oats in this recipe. The oats add texture and heartiness to the cookies, making them a satisfying treat for any occasion.
 – Raisins: While the original recipe calls for raisins, feel free to experiment with other mix-ins such as chocolate chips, chopped nuts, or dried cranberries for a different flavor profile.
