Equipment

Ingredients

  • 1/2 tbsp fresh garlic minced
  • 1/2 cup chopped smoked meat
  • 2 cups cooked black beans
  • 1 tbsp olive oil
  • 2 tbsp fresh orange juice
  • 1/2 small-sized chopped onion
  • 1/2 cup broth or stock
  • 3/8 cup roasted red pepper chopped
  • 1/2 tbsp lime juice
  • 1/2 tbsp cumin
  • 1 tbsp chipotle powder
  • 1/2 tbsp agave syrup

Instructions

Prepare Ingredients:

  • Mince the fresh garlic.
  • Chop the roasted red pepper, smoked meat, and onion.
  • Measure out the olive oil, broth or stock, lime juice, fresh orange juice, cumin, chipotle powder, and agave syrup.
  • Ensure that the black beans are cooked and ready to use.

Saute Aromatics:

  • In a medium-sized skillet, heat the olive oil over medium heat.
  • Add the minced garlic and chopped onion to the skillet. Saute until the onion becomes translucent and the garlic is fragrant.

Add Smoked Meat and Roasted Red Pepper:

  • Stir in the chopped smoked meat and roasted red pepper into the skillet. Cook until the smoked meat is browned and the roasted red pepper is softened.

Season the Mixture:

  • Sprinkle cumin and chipotle powder over the mixture. Stir well to coat the ingredients with the spices.

Combine Citrus Juices:

  • Pour the lime juice and fresh orange juice into the skillet. Stir and let the mixture simmer for a couple of minutes to allow the flavors to meld.

Add Broth and Black Beans:

  • Pour in the broth or stock and add the cooked black beans to the skillet. Stir to combine all the ingredients.

Simmer:

  • Reduce the heat to low and let the black bean mixture simmer for about 10-15 minutes, allowing the flavors to develop and the beans to absorb the seasonings.

Sweeten with Agave Syrup:

  • Drizzle agave syrup over the black bean mixture. Stir well and taste, adjusting the seasoning or sweetness if necessary.

Serve:

  • Once the black beans are heated through and well-cooked, remove the skillet from the heat.
