Ingredients

  • 6 Boneless chicken breasts
  • 2 Tablespoon Low-fat Greek yogurt
  • 8 Tablespoon Low fat mayonnaise
  • 1 cup Dried raisins
  • 2 tablespoon Dijon mustard
  • 1 cup Almonds
  • 1 cup Green apple
  • 4 Tablespoon Lemon juice
  • 4 Tablespoon Parsley
  • 2 tsp Paprika
  • 1 cup Lettuce
  • Salt to taste
  • 2 tsp Garlic powder
  • 1 cup Green onion
  • 1 teaspoon Black pepper
  • 1 cup Red onion
  • 2 tsp Dried oregano
  • 6 Celery stalks

Instructions

  • Begin by cooking the chicken breasts in a frying pan with some oil until fully cooked. Let them cool and then chop into small pieces.
  • In a small mixing bowl, mix together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, parsley, paprika, garlic powder, black pepper, and dried oregano.
  • In a larger bowl, combine the chopped chicken with the almonds, raisins, diced green apple, chopped green onions, diced red onion, and sliced celery stalks.
  • Pour the dressing over the chicken mixture and stir until everything is well coated.
  • Season with salt to taste.
  • Serve on a bed of lettuce or as a sandwich filling.
