Ingredients

  • 2 lb boneless skinless chicken breasts sliced lengthwise
  • 6 lbs even-sized chunks red potatoes
  • 4 medium sliced bell peppers
  • 2 tbsp pureed garlic
  • 2 medium sliced sweet onion
  • 8 cloves minced garlic
  • 8 tbsp minced parsley
  • 1 C sour cream room temperature
  • 1/2 C warm heavy cream
  • 8 tbsp salted butter room temperature
  • 1 C Colby jack
  • 1 C Sharp cheddar
  • 6 tbsp olive oil
  • 5 tsp kosher salt
  • 4 tsp all-purpose seasoning
  • 1 tsp lemon juice

Instructions

  • Preheat your skillet on medium-high heat with 6 tbsp of olive oil.
  • In a bowl, mix together the chicken breasts, pureed garlic, and all-purpose seasoning.
  • Once the skillet is hot, add the chicken breasts and cook for about 5-6 minutes on each side or until golden brown.
  • Remove the chicken from the skillet and set it aside on a plate.
  • Add the red potatoes, bell peppers, onions, minced garlic, parsley, kosher salt, and lemon juice to the same skillet. Cook for about 8-10 minutes until the vegetables are tender.
  • In a separate bowl, mix together the sour cream and warm heavy cream until smooth.
  • Once the vegetables are cooked, add the chicken back to the skillet and pour the sour cream mixture over everything.
  • Top with sliced Colby jack and sharp cheddar cheese.
  • Cover the skillet and let it cook for an additional 5-7 minutes or until the cheese is melted and bubbly.
  • Remove from heat and let it cool for a few minutes before serving hot.
