Ingredients

  • ½ cup butter softened
  • 3 oz cream cheese
  • 1 cup all-purpose flour
  • 1 egg yolk
  • 1 tbsp milk
  • 1/2 tsp baking powder
  • 1/2 cup any flavor fruit jam
  • cup confectioners’ sugar

Instructions

Step 1: Prepare the Dough

  • In a mixing bowl, cream together the cream cheese and softened butter until smooth and well combined. Add the flour and baking powder, and mix until a dough forms. If the dough is too dry, add the milk to achieve the right consistency. To freeze the dough, tightly wrap it in plastic wrap or place it in an airtight container for at least 1 hour.

Step 2: Shape the Kolacky

  • Roll out the dough on a floured surface to about 1/8 inch thickness. Use a cookie cutter or a glass to cut out circles from the dough. Place a small amount of fruit jam in the center of each circle.

Step 3: Seal and Bake

  • Fold the edges of the dough up and over the filling to create a sealed pocket. Brush the tops of the pastries with the egg yolk for a golden finish. Bake in a preheated oven at 350°F for 12-15 minutes, or until the pastries are golden brown.

Step 4: Dust with Confectioners’ Sugar

  • Once the solo kolacky have cooled slightly, dust them with confectioners’ sugar for a finishing touch.

Notes

– Chilling the dough before rolling it out will make it easier to work with and prevent it from becoming too sticky.
– Experiment with different fruit jams or preserves to create a variety of flavors.
– For a richer dough, you can substitute some of the milk with sour cream.
– To prevent the edges of the kolacky from opening during baking, make sure to seal them tightly.
