- 2 pound Ground beef
- 2 can Black beans/ corn chips
- 100 oz Red enchilada sauce
- 4 cups Fritos
- 3 cup White rice
- 4 pieces Chopped Onions
- 1 cup Sour cream
- 6 pieces Green chiles
- 6 tsp Ground ginger and garlic
- 1 cup Shredded cheese
- Olive oil-as needed
- 4 tsp Red pepper flakes
- 2 tsp Sweet paprika
- 4 tsp Taco seasonings
- Fresh lettuce leaves tomatoes – for garnish
Preheat your oven to 375°F (190°C).
In a large saucepan, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
Once the beef is cooked, add in the chopped onions and continue cooking until they soften.
Add in the green chiles, ground ginger and garlic, red pepper flakes, sweet paprika, and taco seasoning. Stir to combine.
Pour in the enchilada sauce and stir everything together. Let it simmer for about 5 minutes.
In a separate bowl, mix together the cooked rice and black beans/corn chips.
Grease a large baking dish with olive oil.
Layer the bottom of the dish with Fritos, then top with half of the beef mixture, followed by half of the rice and bean/corn chip mixture. Repeat these layers one more time.
Sprinkle shredded cheese over the top of the casserole.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Let cool for a few minutes before serving.
Serve with optional toppings like lettuce leaves, chopped tomatoes, sour cream, or other desired toppings.
